MARCH RECIPE – Healthy Egg Bake

We admit it: There are some (or more like, many) mornings where it’s everything we can do to will ourselves out of bed and grab a fistful of cereal or a crappy granola bar on our way out the door. It’s not like a gourmet breakfast is a realistic everyday goal. But that doesn’t mean we should settle for a sugar rush that will leave us sad and hungry just a half hour later. You’d be surprised how many healthy breakfast ideas require very little effort when put into practice. Here is a favourite of Coach Stef’s

This low carb pre-cooked breakfast that will make your mornings all the brighter. Packed with spinach & ham for a healthy start to your day.

INGREDIENTS
60-80 gram spinach
80-100 gram ham
60 gram Bega 50% less fat shredded cheese
3 eggs
500 gram Egg Whites (we use the carton egg whites)
1/2 tsp salt
1/4 tsp pepper
DIRECTIONS
Grease oven proof rectangle dish
Layer ham on bottom, then spinach & top with cheese.
In a large bowl, whisk eggs, egg whites & any extra spices (garlic) till well combined (or use a blender and make the process quick/easy). Pour egg mix over ingredients.
Cover with foil and place in preheated oven (170 degrees) for 30min. Remove the foil and bake for a further 10min or until egg is set.
Cool & slice into 8 serves.
